If you ask Google, the first thing we want to know about spray cream, the cheat sheet for whipped cream, is what it actually contains. The trend of making things from scratch and incorporating increasingly advanced tools into the home kitchen has taken hold and nothing beats fluffy, freshly whipped cream. Why not use the siphon for semlan's cream, it keeps perfectly in the fridge for at least 10-12 days and you can forget all about E-substances.
With a siphon you get fluffy cream in just a few seconds. It is also ideal for making sauce foamy and giving it the perfect consistency. Perhaps you have wondered how the restaurant actually makes the lobster bisque bubble on the plate? The answer is the siphon that lifts every soup, sauce, mousse, cream and meringue to a whole new level of fluffiness.
How does the siphon work?
There are two types of siphons, soda siphons and cream siphons. The soda siphon lets you carbonate anything as long as it is liquid. The cream siphon has an even wider range of uses and if you haven't discovered it yet, it will soon be your new favorite gadget that will make you want to spend even more time in the kitchen.
You fill the siphon with the cream or batter you want to give an extra boost in texture, screw on the lid with the nozzle and load with a cream cartridge containing nitrous oxide that dissolves in fat-based mixtures. Then you shake the siphon, turn it upside down and squirt out the contents. It can be advantageous to leave it in the refrigerator to let the contents settle and if you want to save the contents for another day, the cream's fine taste and consistency will last for 10-12 days. There are also siphons that can withstand heat up to 75 degrees, so the sauce can be placed in a hot water bath, for example, until you are ready to serve it at the perfect temperature.
